Vegan Cherry Pecan Scones

Ingredients:
2 ¾ cups whole wheat flour (I sometimes do a mix of whole wheat and whole spelt)
1 tablespoon baking powder
2 ½ tablespoons white sugar
2 tablespoons brown sugar
pinch of salt
¼ cup coconut oil
1¼ cup almond milk (I make my own by using same amount water with 2 tbsp almond butter blended together)
¾ cup fresh cherries
½ cup chopped pecans
Instructions:
Heat the oven to 220 C (425 F). Line a baking sheet with parchment paper
In a large bowl, mix the flour, baking powder, sugars, and salt.
Add the oil into the flour and using your hands mix until it looks kind of grainy, but without big chunks.
Make a whole in the middle of the mix and pour in the almond milk. Mix together until it's almost all the way combined but not completely.
Fold in the cherries and pecans but be sure not to over mix
Using a tablespoon, scoop out the dough onto the parchment paper.
Brush with a bit of almond milk and sprinkle with brown sugar
Bake for 12-15 minutes or until they are golden around the edges (do not over bake!)
